PAUL LATO PINOT NOIR "C'EST LA VIE", DRUM CANYON VINEYARD, STA. RITA HILLS 2017
NVWE Notes: A picture of structured dark red fruits, this bottling may taste and feel like fine Burgundy if allowed the cellar time. The nose offers a tight mix of red plum galette, black cherry cobbler, pomegranate coulis, rose petal jelly, Umeboshi plum, canela and sandalwood scents, with undercurrents of dark tobacco. On the palate, it is lean, piquant and slightly gripping, which gives a hard edge to emerging flavors dominated by red cherry, cranberry relish, red apple skin, rose, coriander seed and a hint of rosemary. The finish is sleek and long, but the wine needs a good deal of airing before the flavors take on the fullness the aromas promise. Built for Prime Rib, grilled salmon and fatty meats at this point, it will broaden in food-friendliness and greatly in overall appeal over the next three or four years and well beyond.
