PAUL LATO PINOT NOIR "SEABISCUIT", ZOTOVICH VINEYARD, STA. RITA HILLS 2017
NVWE Notes: This complex offering gains in richness, clarity and apparent length as it airs. With airing, piquant aromas of black cherry, Italian Maraschino cherry, crab apple syrup, red raspberry, red currant, red rose, canela, baking-spice, cherry pit and hazelnut husk are revealed. Wild cherry, black cherry, crab apple syrup, cranberry relish, coriander seed, sandalwood and hazelnut create a racy mouth-feel in the mid-palate. The finish is long, slightly minerally and centered on coiled dark red fruits. It already has an impressive dinner balance and three years should make it truly seductive. In the meantime, judicious airing will achieve a less complete but still admirable result.
