NVWE Notes: In a revival of ancient sparkling winemaking technique, this wine was directly fermented in its individual bottle, yet never disgorged of its yeast. As a result, its appearance is curiously cloudy and a yeast deposit that is harmless but not meant to be drunk clings to the bottom. The nose offers charming, vibrant, focused scents of green apple skin, Fuji applesauce, candied lemon peel, grapefruit pith, peach pit, bees wax, fennel bulb and celery seed. The wine proves as vividly fruity as promised on the palate, where its aromatic promise is fully replicated, and highlights of ginger-mint ice tea, Meyer lemon, Mandrine orange and some mineral undercurrents grace a super-long, vibrantly fruity, bone dry finish. As captivating as it is unusual, this beauty is meant to be drunk in its youth. It will prove a terrific holiday appetizer wine. 100% Sauvignon Blanc, 200 cases made.
